Shrimp Curry
 
Ingredients:
  • 3 lbs. Shrimp,

  • 1 Tbsp. Turmeric,

  • 1 Tbsp. Curry Powder,

  • 1 Tbsp. Garlic Powder,

  • 1 Tbsp. Salt,

  • 1 Cup of Chopped Onions,

  • 1/2 Tbsp. Chili Powder,

  • 2 oz. Butter or Margarine or Oil,

  • 1 Cup of Coconut Cream,
  • 2 - 4 Potatoes. Any size shrimp may be used in this curried dish.

Direction:

In a saucepan, sauté 1 Cup of Chopped Onions, 1 Tbsp. Garlic Powder, 1 Tbsp. Curry Powder, 1 Tbsp. Turmeric. Add 1 Tbsp. of Salt, 1/2 Chili Powder in 2 oz. of Oil or Margarine or Butter until soft but not brown. Add 1 Cup of Coconut Cream, 2 to 3lbs of peeled and uncooked Shrimp, 2 Cups of Diced Potatoes and 1 1/2 Cups of Water. Simmer until tender for about 20 minutes and covered tightly. Add 1 cup of Coconut Cream and 2 oz. Lemon Juice. Cook until slightly thickened for about 10 minutes more. Serve over Rice, Pasta or Beans.




Safari Steak
 
Ingredients:
  • 7 lb. Steak,

  • 1 cup Dry Red Wine,

  • 1 Cup Sweet Wine (optional),

  • 2 Tbsp. Oil, 2 oz. Butter,

  • 2 Cloves Garlic,

  • 3 Cups of Mashed Potatoes,

  • 4 Tbsp. Tomato Paste,

  • Chopped Parsley and Water.
Direction:

Cut Steak into 1/2-lb steak each and dry or drain each steak completely. In an Electric Skillet, heat 2 Tbsp. of Oil and 2 oz. of Butter to the smoking point. Fry Steaks in pan a few at a time according to size of Skillet for about 3 minutes on each side, adding Fat (oil, Butter) as required. Season each steak with Salt and coarse-ground Pepper and set aside in a warmer. Turn down the heat and add a cup of Dry Red Wine, 1 cup of Sweet Wine (optional). Stir with the meat residues in the pan. Add 2 Cloves of finely minced Garlic and cook for another 2 to 3 minutes. Add 4 Tbsp. Tomato Paste with 4 Tbsp. of Water. Cook until sauce is quite thick. In a saucepan, mix 3 cups of Mashed Potatoes and beat thoroughly. Add seasoning if there is a need for it. Spread a bed of Potatoes on a large Platter and arrange the Steaks on the Potatoes. Pour the sauce over the Steaks and sprinkle Chopped Parsley. Ready to be served.
